Beefy Cornbread Casserole
Casseroles are quick and easy to put together and it's an all in one meal.
1 lb 93/7 lean ground beef
10.75 oz tomato soup
2 tbsps light butter with canola oil
1 tsp original seasoning blend
5 oz yellow cornbread mix
15 oz whole kernel sweet corn
1 large egg
4 oz part skim shredded mozzarella cheese
1/3 cup 1% milk
1 tbsp chili powder
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion, chopped
1/2 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
Preheat oven to 350 °F (175 °C). Spray a 13"x9" baking dish with cooking spray.
Meanwhile heat a large skillet to medium heat. Add onions and saute until the onions are soft. Add ground beef and cook until no longer pink.
Stir in soup, corn, chili powder, seasoning blend, and water. Pour into baking dish.
In a separate bowl, mix cornbread mix, egg, butter, and milk together. Spread the batter evenly over the top of the meat mixture.
Bake 20-25 minutes until cornbread is baked. Sprinkle cheese on top and broil 3-5 minutes until cheese is melted.
