1. | Chop the carrot, onion and garlic quite small and add to a big soup pan. |
2. | Add all the other ingredients except the vinegar and pepper. |
3. | Bring to a boil for about ten minutes and then let simmer for about 80 - 90 minutes, stirring occasionally but more often towards the end. |
4. | Turn off the heat and stir in the red wine vinegar and season with pepper. I find it doesn't need salt thanks to the tasty stock but feel free to add a pinch. |
5. | Serve hot. |
