Roasted Tomato Canoes
As an appetizer or light entree these are delicious.
6 plum red tomatoes
2 cloves garlic
2/3 cup breadcrumbs
1/2 cup feta
1 dash sea salt
1 dash pepper
2 tbsp extra virgin olive oil
Cut tomatoes in half and de-seed them.
Place them on paper towel for about 5 minutes to dry them some.
Preheat oven to 350 °F (175 °C).
Marinate tomatoes in olive oil, minced garlic, sea salt and pepper for 10 minutes.
Mix cheese and breadcrumbs.
Spoon mixture in the tomatoes.
Bake for 30 minutes.
