“Mac” & Cheese
Cauliflower mac and cheese.
6 tbsps cream cheese
1 1/2 cups shredded cheddar cheese
1/2 cup deep-fried pork rinds
1 cup unsweetened whipped heavy cream
1 tsp garlic powder
1 dash black pepper
1 dash salt
5 cups cauliflower
Preheat oven to 375 °F (190 °C).
Cut cauliflower into small pieces and steam until tender, approximately 5 minutes.
Remove and strain.
Melt cream cheese in a medium saucepan over medium heat. Whisk 1 cup cheddar cheese, pepper, garlic, and salt. Once cheese is melted remove from heat
Transfer cauliflower to a 9x9" baking dish. Pour cheese mixture and toss to coat. Sprinkle remaining cheese and crushed pork rinds on top.
Bake until bubbly, about 20 minutes.
