2 slices bacon
1 tbsp fat free sour cream
1/4 cup shredded fat free mozzarella cheese
1/2 cup cooked red peppers
1/2 cup cooked mushrooms
2 large eggs
Directions
Pre-heat oven to 350 °F (175 °C).
Cook and crumble bacon and stir fry vegetables, no oil.
Whisk eggs and sour cream in a 9" pie plate sprayed with non-stick cooking spray.
Stir in crumbled bacon, vegetables and cheese.
Bake for 30 minutes or until top is golden brown.
