Baked Sweet Onion Omelet
Easy, low calorie baked omelet that even my kids love.
9 large eggs
3 large egg whites
6 oz fat free sour cream
1 tbsp pepper
2 tsps season salt
8 tbsps sweet onion salsa
1 cup asparagus
1/2 cup pieces turkey bacon
4 oz fat free cheddar, shredded
3 tbsps parmesan cheese
Pre-heat oven to 400° F (200° C).
Cut bacon into pieces and fry in a pan.
Cool cooked bacon on a paper towel.
Mix all ingredients together except for the sour cream when the bacon is cool.
Spray a 12x12" baking pan with non-stick spray, then pour the egg mixture into the pan.
Bake eggs for 35 - 45 minutes, or until firm and slightly brown on top.
Cut eggs into 6 pieces and serve with sour cream on top.
