Barley & Mung Bean Salad
A nutty, grainy salad that can be enjoyed hot or cold.
1 cup whole hull-less barley
1 cup dry sprouted mung beans
1/4 cup raw sunflower seeds
1/4 cup raw pepitas
1/2 cup dried cranberries
2 tbsps white balsamic vinegar
2 tbsps olive oil
juice of 1/2 a lemon
Prepare a barley and mung beans according to package directions.
Drain and then mix with the other ingredients. Add salt and pepper to taste.
