Beef and Turkey Pepperoni Casserole
A Weight Watchers inspired Super Bowl Kickoff casserole.
3/4 cup shredded cheddar cheese
2 tbsps parmesan cheese
1 <span class="measurestring" title="can (10.75 oz)">can</span> cream of chicken soup
1 1/2 cups spaghetti sauce
3 1/2 oz turkey pepperoni
4 oz olives, sliced
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion, chopped
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> orange bell pepper, sliced
7 oz whole wheat egg noodles
1/2 lb lean ground beef
10 oz sliced mushrooms
Pre-heat oven to 350 °F (175 °C). Spray a 2 quart baking dish with nonstick spray. Cook the noodles as directed. Rinse and drain.
Spray a large non-stick skillet with non-stick spray. Cook mushrooms, bell pepper, onion over medium-high heat for 5 minutes.
Add the beef and cook until browned.
Add the spaghetti sauce, soup, 1/2 cup cheddar cheese and the noodles. Spoon into the baking dish.
Bake until hot, about 40 minutes. Top with the remaining cheddar and remaining ingredients. Bake 5 minutes longer.
