Soak black beans in large bowl of water with 1-2 teaspoons of baking soda overnight. Rinse well. Place in crockpot.
Heat skillet to medium-high, add extra virgin olive oil, yellow onion, a heaping tablespoon chopped garlic and celery. Add in a teaspoon black pepper, rosemary, Italian seasoning, a teaspoon chili powder, oregano, and 1/2 teaspoon seasoning salt.
Sauté until slightly tender. Add all to crockpot.
In uncleaned skillet, add ground turkey and remaining spices.
Cook, stirring frequently, until browned. Add to crockpot.
Add remaining ingredients (except for the red onion, save for topping) to crockpot. Stir and cook on low approximately 8 hours.
Serve with shredded cheddar or pepper jack cheese, lite sour cream and chopped red onions.
