Black Bean Cilantro Salad
Black beans with cilantro, lime, garlic and onion.

  1. Mince garlic and red onion.
  2. De-stem and chop cilantro. Careful not to touch the pepper - deseed and mince the hot chili pepper.
  3. Mix ingredients together in a bowl with the juice of the lime.
  4. Chop tomato. Remove seeds if desired.
  5. Drain and rinse canned black beans.
  6. Mix together all ingredients.
  7. Serve tossed with a salad or alone.
  8. Note: can also be used in a wrap and delicious with avocado.
