Black Beans & Corn Salsa Salad
Different take on a taco salad with lean beef, black beans, cheese and salsa.
1/4 lb lean ground beef
2 cups salsa
1/2 cup back beans
1 cup corn
4 cups shredded or chopped lettuce
1/4 cup shredded cheddar cheese, low fat
4 oz ranch salad dressing, fat free
Brown and drain the ground beef; return to pan and add 1 jar, approximately 2 cups of salsa.
Add to pan black beans and corn and let simmer for about ten minutes.
Serve on a bed of lettuce topped with shredded cheese and ranch dressing.
