Breakfast Quiche Muffins
Breakfast quiche with veggies and Canadian bacon that are great to have on hand for a quick breakfast.
1 cup egg beaters
1/2 cup reduced fat mild cheddar cheese
2 tbsp green onion
4 slices Canadian bacon
1 slice double fiber wheat bread
1/2 <span class="measurestring" title="can (300 x 407)">can</span> asparagus
Spray large muffin tin with baking spray like Pam.
Put 1/4 of the bread in each of the four cups.
Divide the vegetables, cheese and Canadian bacon between cups.
Pour eggs over the cup evenly until cups are full.
Bake for 40 minutes at 350 °F (175 °C).
These can be frozen and reheated. To reheat, microwave on 50% power for 45 seconds.
