Broccoli Soup

  1. Let milk warm to room temperature.
  2. Heat oil on medium heat in a large pot. Sauté onion, garlic, and celery until softened (about 5 minutes).
  3. Add potato and broccoli. Then add broth and milk.
  4. Bring to a boil, then reduce heat, cover and simmer for 20 minutes.
  5. If you prefer a smoother soup, process slightly cooled soup in batches in a food processor.
