Easy cabbage soup recipe that will delight you and your diet.

1 head cabbage
1 lb onion
2 cups chopped bell pepper
2 cups chopped celery
5 cloves garlic
4 cups chopped carrots
1 packet onion soup mix
1 tsp salt
1 tsp pepper
1 tbsp garlic
6 cups chicken broth
4 cups pieces or slices mushrooms
1 tbsp extra virgin olive oil
In a large stock pot add the extra virgin olive oil on medium heat.
Add onions, garlic and peppers, heat until onions are clearish.
Add celery and mushrooms.
Add carrots, soup mix (like lipton's brand), chicken stock and spices.
Bring to a boil, turn down to simmer.
Add cabbage pushing it down into the liquid, then add filtered water until cabbage is covered.
Cook for one hour and let cool down before serving.
