Caramel Pork Spare Ribs
Tasty pork spare ribs. Also works with beef. Best served with rice and Asian greens.
2 tsps ground pepper
1 tbsp oil
2 tbsps fish sauce
3 lbs spare ribs
2 large spring onions, sliced
1 <span class="measurestring" title="large (2-1/4 per lb, approx 3-3/4" long, 3" dia)">large</span> sweet red pepper, finely sliced
1/2 cup caster sugar
Marinate ribs, fish sauce, red pepper, chilli, 2 tsp of the sugar and half the spring onion in a clay pot or casserole dish.
Combine remaining sugar and oil in a small pan and cook over medium heat for 3 minutes until golden.
Pour over ribs and cook covered over medium heat for 25-30 minutes until sauce is reduced by half.
