Caribbean Pineapple Lime Ice Cream
Delicious do-it-yourself ice cream.
14 oz Fat Free Sweetened Condensed Milk
1/4 cup fresh lime juice
1 cup heavy cream
2 tsps vanilla extract
20 oz crushed pineapple, undrained
Combine undrained pineapple, sweetened condensed milk, lime juice, a teaspoon of grated lime peel, vanilla and food coloring, if desired, in large bowl; mix well.
Whip cream in medium bowl with electric mixer at medium speed until stiff peaks form. Fold into pineapple mixture.
Pour into 9x5" loaf pan or 2-quart freezer-safe container.
Cover; freeze until firm, about 3 hours.
