Catalan Beef Stew
Easy and unique stew with a surprise ingredient - chocolate!
2 cups cooked, diced beef
1 g cinnamon, pinch
2 tbsp olive oil
2/3 cup beef stock
1/2 medium carrot, chopped
1/2 <span class="measurestring" title="stalk large (11"-12" long)">stalk large</span> celery
2 cloves garlic
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion, chopped
1 <span class="measurestring" title="large whole (3" dia)">large whole</span> tomato, chopped
5 fl oz red wine
2 tbsps unsweetened cocoa
1 g flour (1/2 tbsp)
Chop garlic, onion, tomato, carrot, celery and leek.
Heat olive oil in pot, add meat and brown for 3-4 minutes.
Add the flour and stir. Add the wine and stir. Cook for 1 minute.
Add the garlic, onion, tomato, carrot, celery and leek to the pot, stir.
Add the cocoa powder. Add beef stock, stir and bring to a boil.
Partially cover and lower to simmer.
Allow to simmer for one hour to an hour and a half until the meat is tender.
Salt and pepper to taste.
