Cauliflower and Asparagus Soup
Tasty cauliflower and asparagus soup.
2/3 cup milk evaporated
1 dash pepper to taste
1 dash salt to taste
1 tbsp margarine
1 1/2 cubes chicken powder with 3 cups of water
1 <span class="measurestring" title="can (300 x 407)">can</span> asparagus canned
1/4 <span class="measurestring" title="head, medium (5-6" dia)">head medium</span> cauliflower roughly chopped
1 tbsp chopped chives
1 clove garlic crushed
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion chopped
1 <span class="measurestring" title="potato medium (2-1/4" to 3-1/4" dia)">medium</span> potato diced
Heat margarine in a pot. Cook onion and garlic until glassy. Add cauliflower and potato. Cook for 1 minute.
Add asparagus, asparagus juice, stock and milk.
Bring to the boil. Reduce heat, cover and simmer for 45 minutes. Blend until smooth. Season with salt and pepper. Garnish with chives and serve.
