Cauliflower Rice II
A no carb rice substitute.
1/2 tsp curry powder
1 dash black pepper
1 dash salt
1/2 tsp olive oil
1 <span class="measurestring" title="head, large (6-7" dia)">head large</span> cauliflower
1 small onion, diced
1/2 <span class="measurestring" title="large (2-1/4 per lb, approx 3-3/4" long, 3" dia)">large</span> sweet red pepper, diced
Chop cauliflower into large chunks, omitting the leaves and stem.
Sauté diced onion and diced red pepper with 1/2 tsp olive oil until soft, about 10 minutes over medium heat.
Grate cauliflower until it resembles a rough chop, like a grainy rice-like texture.
Add cauliflower to pan with onions and peppers, increasing heat to medium high. Cook for 5-6 minutes or until cauliflower is soft and has a rice like consistency. Add curry powder, salt and pepper.
