Cheesy Bean Burgers
Very quick and easy to make bean burgers that taste really nice.
800 g mixed beans
2 slices bread
2 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onions
100 g low fat cream cheese
1 dash salt
1 dash pepper
1 tsp cooking spray
Crumble the slices of bread into a food processor.
Add the beans (drained and rinsed), the finely chopped onions, the low fat soft cheese and the salt and pepper.
Whiz in the food processor to create rough paste.
Put the oil into a frying pan (or use spray oil) and heat it gently.
Either using your hands or a large spoon, shape the mixture into burgers.
Fry the burgers 4 at a time in the pan. Fry each side for 2-3 minutes.
Serve with salad.
