Cheesy Chicken Fajita Lettuce Wraps
A low carb tasty fajita.
1 lb chicken breast, cut in cubes
1 1/2 cups sliced yellow squash, thick slices
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> green pepper, sliced thick strips
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> red onion, sliced
1/2 <span class="measurestring" title="cup (8 fl oz)">cup</span> bbq sauce
1/2 tsp cayenne pepper
12 leaves inner lettuce
1 cup shredded cheddar cheese
1/2 tsp ground cumin
Spray large skillet with cooking spray. Add chicken and cook until no longer pink.
Add all remaining ingredients except lettuce and cheese. Cook 6-8 minutes until chicken and vegetables are tender.
Top with cheese. Add mixture to empty lettuce leaves. Wrap.
Add sour cream if desired.
