Ingredients

Directions

1. In stockpot, bring chicken broth and water to a boil. Cook chicken for about 5 minutes or until done. Remove chicken to cutting board and let it cool.
2. Add onion, carrots and celery. Boil for about 10 minutes or until vegetables are tender.
3. Add zucchini and mushrooms and cook for an additional 5-10 minutes.
4. Shred chicken with two forks and add to stockpot.
5. Add salt, pepper, and parsley.
6. Enjoy!
