Preheat oven to 350 °F (175 °C). Lightly spray the bottom of a 9x12 glass baking dish. |

In a bowl mix parmesan and Italian seasoning. |

Roll chicken in parmesan to coat and place pieces in one layer on bottom of baking dish. |

Saute onions in butter for 1 minute. Add flour, stir. |

Over medium heat add milk stirring with whisk to blend evenly. Continue stirring until sauce thickens slightly. Add spinach and blend thoroughly. |

Spread spinach mixture in a layer over the chicken. Top with remaining parmesan. |

Bake for 35-45 minutes until top begins to brown. |

Remove from oven, let sit 5 minutes, before serving. |
