Chicken with Sun Dried Tomato and Artichoke Sauce
A decadent creamy chicken dish that everyone will love.
8 <span class="measurestring" title="oz, boneless, raw (yield after cooking)">oz boneless</span> chicken breast
1/4 cup sun dried tomatoes
6 artichoke hearts
2 tbsps chopped shallots
1 clove garlic
1/2 cup organic chicken broth
2 tbsps heavy whipping cream
32 fl oz white wine
Spray a non-stick pan with cooking spray.
Add salt and pepper to both sides of chicken. Sear chicken on both sides and turn down heat.
Add butter then the finely chopped shallots, garlic, and sun dried tomatoes (can have a coarser chop).
Cook for a few minutes until lightly brown (be careful not to burn). Deglaze pan with the wine.
Add chicken broth and heavy cream.
Simmer for a few minutes. Sauce will thicken slightly. Serve with veggies, over pasta, or with rice.
