Chili Pork and Cashews
Fantastically quick and easy Chinese meal - who needs takeaways.
1 dash black pepper
1 dash salt
1 tbsp mild chili sauce
12 oz lean pork, cut in strips
1 medium carrot, cut in matchsticks
2 oz baby sweet corn
1 clove garlic, crushed
2 medium courgettes, cut in matchsticks
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> red pepper, cut in strips
2 oz cashew nuts
2 tbsps vegetable fat spread, reduced calorie
9 oz cooked rice
Melt the spread in a wok or large frying pan, add the garlic and cook, stirring, until soft.
Add the pork and stir fry over a moderately high heat until no longer pink.
Add the vegetables and stir fry for about 5 minutes until just cooked.
Add remaining ingredients and heat through.
Serve with rice.
