Chinese Beef and Pepper Salad
A healthy beef salad with a tasty Asian flavor sauce.
1 tsp ginger
2 tbsps extra virgin olive oil
1 clove garlic, minced
2 <span class="measurestring" title="small (3" long)">small</span> scallions, sliced
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> red bell pepper, cut into slivers
1 lb london broil, cut into slivers
1/3 cup soy sauce, light
2 servings 1 packet sugar substitute
1/3 oz dry sherry (1 tbsp)
In small bowl, whisk together soy sauce, oil, sherry, sugar substitute like Splenda, ginger and garlic.
Add beef and toss to coat.
Cover and refrigerate for up to 1 day until ready to use.
Drain beef and reserve marinade.
Place beef on plate and toss with pepper and scallions.
Serve with reserved marinade on side.
