Chipotle Black Beans
A great support act for a Mexican feast.
1 tbsp butter
1/2 cup chopped red onion
2 cloves garlic, minced
2 cups black beans, undrained
1 tbsp adobo sauce
1/2 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
1/4 tsp red pepper flakes
1/2 tsp salt
1/4 tsp pepper
Melt 1 tablespoon butter and sauté onion and garlic in butter until tender.
Add beans, peppers, water and crushed pepper, salt and pepper and a teaspoon or two of the adobo sauce if you like.
Bring to boil, reduce heat and simmer 15 minutes.
Serve beans topped with a dollop of sour cream and sprinkling of sliced green onion.
