Low carb chocolate cookies for Atkins or ketogenic diets.
1/4 cup carbalose flour
2 tbsps sweetener
1 medium egg
1/4 cup tap water
1/4 tsp baking powder
2 tbsps vegetable oil
1/4 tsp cinnamon
1 tsp vanilla extract
1/4 cup low fat peanut flour
1/4 cup unsweetened cocoa powder
In a mixing bowl, mix all dry ingredients.
Add warm water and the rest of the wet ingredients. Mix well using a fork.
Heat oven to 400 °F (205 °C). Use cooking spray on a cookie sheet and with a spoon, drop dollops of dough on the cookie sheet.
Bake for 15-20 minutes or until toothpick inserted comes out clean.
