Cinnamon Raisin Roll-Ups
A recipe I found in a kids cook book and made for my daughter, and ended up liking it for lunch.
4 oz low fat cream cheese, softened
1/2 cup grated carrot
1/4 <span class="measurestring" title="cup (not packed)">cup</span> golden raisins
1 tbsp honey
1 tsp cinnamon, ground
4 flour tortillas
1/2 cup slices apple (8 thin wedges)
Combine cream cheese, carrot, raisins, honey and cinnamon in small bowl; mix well.
Spread tortillas evenly with cream cheese mixture, leaving 1/2" border around edge of each tortilla.
Place 2 apple wedges down center of each tortilla; roll up.
Wrap in plastic wrap. Refrigerate until ready to serve.
