1 cup corn meal
1 cup corn
1/2 tsp baking soda
1 tsp salt
2 tbsp canola oil
2 large eggs
3/4 cup mild chunky salsa
1 cup fat free milk
1/2 cup fat free cheddar cheese
12 oz lean ground beef
In medium bowl, combine corn and a bit of juice, cornmeal, baking soda, salt, oil, milk, eggs, and salsa.
Pour half of mixture into crock pot.
Layer cheese, onion, garlic, chiles and ground beef on top of cornmeal mixture.
Cover with remaining cornmeal mixture.
Cook on low 6 hours.
