Couscous with Corn & Black Beans
A very quick and tasty moderately spicy salad.
1/2 tsp salt
1/2 cup cilantro, chopped
juice of 1 lime
2 tbsps olive oil
30 oz black beans
1 1/2 cups red onion, chopped
1 tsp cumin
1 tsp black pepper
1/2 tsp red pepper
14 oz corn
2 cups of couscous
Drain and rinse black beans. Drain corn and combine in a medium-large bowl.
Add olive oil and lime juice.
Chop onions and cilantro and combine with beans and corn. Cook couscous while chopping.
Add salt, black pepper, red pepper and cumin.
Stir in cooked couscous a small amount at a time.
