Creamy Whole Wheat Pasta Salad
A healthy choice for a refreshing summer salad.
14 oz whole wheat rotini
3 1/2 oz turkey pepperoni
1 3/4 cup nonfat plain yogurt
1/3 cup fat free sour cream
2 2/3 tbsp ranch dry mix
1 tbsp celery seed
2 tsps dill weed
2 1/2 tbsps vinegar
2 cups pared, chopped cucumbers
1 <span class="measurestring" title="large whole (3" dia)">large whole</span> tomato
2 cups broccoli florets
Bring 5 quarts of water to a boil and add pasta.
Cook approximately 12-14 minutes and drain well.
Let cool for several minutes and mix with cut up broccoli, cut up tomato, chopped cucumbers and chopped turkey pepperoni.
While pasta is cooking, mix nonfat plain yogurt and fat free sour cream with ranch garlic season mix, celery seed, dill and vinegar.
Pour mixture over salad and mix well. Serve.
