Crockpot Black Beans
Easy black bean recipe to serve over rice or as a side with chicken or sausage.
4 tsps cumin, ground
1 tsp salt
2 tbsps olive oil
5 cloves garlic, minced
1 large onion, chopped
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> green bell pepper, chopped
28 oz diced tomatoes with juice
1/2 cup chopped or diced green chilies
5 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
16 oz black beans, dried and rinsed
Mix all ingredients in crockpot.
Cover and cook on high for 6 to 8 hours, or until most liquid is absorbed.
Serve over warm brown rice or as a side to lean meat.
