Feta Pesto Chicken
chicken breasts flattened and stuffed with a mix of pesto and crumbled feta.
1/2 cup crumbled crumbled feta cheese
1/2 oz parmesan cheese
1 dash pepper
20 leaves basil
1 dash salt
2 tbsps olive oil
2 breasts, bone and skin removed chicken breast
0.12 oz pine nuts (quarter handful)
Pre-heat oven to 350 °F (175 °C) and tenderize the chicken breasts between two sheets of stretch wrap then season with dash of salt.
Take basil leaves, olive oil, pine nuts and parmesan and blend to preference in a food processor, then gently mix in crumbled feta cheese (fat free if available).
Place half of pesto feta mixture in the middle of each chicken breast and wrap the chicken around filling.
Place the wrapped chicken seam side down on to a lightly oiled pan, drizzle with a touch of olive oil then lightly salt and pepper.
Place in oven for 35-40 minutes uncovered.
then turn broiler on high and broil for an additional 4-5 minutes.
Drizzle drippings over plated chicken and serve.
