Fluffy Almond Waffles
Light grainless waffles made with ground almonds, bananas, spices and honey.
2 large eggs, separated
1/2 cup mashed overripe banana
1/4 cup milk, nonfat
1 tbsp vegetable oil
1 cup ground almonds
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp baking powder
1 dash salt, pinch
Mix yolk, mashed banana, milk, honey and oil.
Sift in almond meal, baking powder and salt.
Stir in spices.
Beat whites until stiff, hard peaks form.
Carefully fold in egg whites, mix to fully combine.
Fold in sliced fruit if desired.
Bake in a waffle iron. These waffles tend to be wet so bake them at a lower temperature for a longer amount of time.
Note: while most grainless waffles are heavy this special technique makes these waffles light!
