Four Bean Soup
An easy and healthy low fat, good carbs soup.
32 oz chicken broth
1 lb lean ham steak, cubed
4 <span class="measurestring" title="stalk, medium (7-1/2" - 8" long)">stalks medium</span> celery, diced
1 tbsp dehydrated onion flakes
14 1/2 oz tomatoes, diced
3 oz tomato paste
15 oz lima beans, drained
15 oz black beans, rinsed
15 oz kidney beans, rinsed
15 oz white beans
Cook ham and celery until done. Add all other ingredients and simmer for at least 20 minutes.
Makes 6 servings of 1 1/2 cups each.
Note: if available use low fat or fat free chicken broth.
