Egg, bacon and potato frittata in single serving muffin. Great to freeze and reheat for a quick on the go meal.
3 <span class="measurestring" title="thin slice (yield after cooking)">thin slices</span> bacon
3 large eggs
1 <span class="measurestring" title="potato medium (2-1/4" to 3-1/4" dia)">medium</span> white potatoes
3/4 cup low fat milk
Preheat oven to 350 °F (175 °C).
Cook bacon. While bacon is cooking dice potato and place on a cookie sheet in oven. Bake until soft or desire texture.
Dice bacon and mix with potato in bowl. Whip eggs and milk together then add to bacon and potato.
Pour mixture into muffin tins lined with paper baking cups for easy clean up.
Bake for 30 minutes or until eggs are fully cooked.
