  1. Preheat oven to 400 °F (200 °C). Add one tablespoon of olive oil to skillet, and add package of spinach. Cook until wilted.
  2. Squeeze water out of spinach in a clean towel and set aside.
  3. Add the other tablespoon of olive oil to skillet and sauté onions, mushrooms, add garlic until soft. Add ham chopped into cubes.
  4. Add spinach and incorporate all ingredients together.
  5. Scramble egg (with a splash of milk) and pour over spinach and vegetables. Turn heat down and let cook until egg starts to get solid at the top.
  6. Remove from heat, sprinkle parmesan cheese and cheddar cheese and put in the oven for 5-7 minutes. Remove when bubbly and brown.
