Delicious prawn recipe which is quick to make.
40 g butter
2 tbsps olive oil
1 tbsp lemon rind
3 cloves garlic, finely chopped
1/4 cup flat leaf parsley, chopped
1/4 red chili, finely chopped
500 g cooked prawns, peeled
Heat oil and butter in pan over medium heat.
Add garlic and chili stirring for 2-3 minutes.
Add parsley, lemon rind, and salt and pepper and combine.
Add prawns - heat through (don't leave them in too long otherwise they become rubbery).
Squeeze some lemon juice over the prawns.
Serve with salad and enjoy.
