Grilled Mediterranean Vegetables
Marinated grilled vegetables on the grill.
1 cup italian dressing, low fat
1 medium zucchini
1 cup whole mushrooms
1 <span class="measurestring" title="eggplant, peeled (yield from 1-1/4 lb)">peeled</span> eggplant
Wash mushrooms, peel and slice zucchini and eggplant into long strips.
Marinate at least 2 hours in the low fat Italian dressing.
Grill on charcoal or gas grill until brown.
Note: mushrooms should be placed on skewers for ease of grilling.
