in a large mixing bowl add yeast, honey and salt. |

Mix until the honey melts and then let sit for about 10 minutes. |

Add 4 cups of flour and mix for at least ten minutes activating the gluten. When the dough is smooth add the last 2 cups and use a stiff or wooden spatula to incorporate the rest of the flour. |

Divide the dough into two 9x4" greased bread pans and let rise in a warm place for 15 minutes. |

Place in a cold oven for 10 minutes at 200-250 °F (90-120 °C) and then increase to 350 °F (175 °C) for 40 minutes. (If you have any hot spots in your oven be sure to check your bread early on.) |

Remove from oven and loosen the edges with a knife and place on cooling rack. |

Don't be afraid to cut into the bread while it's still hot. It will get squishy but tastes like heaven! |
