Hummus with Spinach
Fresh spinach combined with chick peas make this tasty dip.
2 1/2 cups spinach
1 3/4 cups chick peas
1 tsp minced garlic
1 tbsp olive oil
Cook spinach, garlic and oil until spinach is tender but still green about 3 minutes.
Blend chick peas in a blender or food processor until creamy.
Add spinach mixture and salt and pepper to taste.
Blend well and serve with chips, crackers, or even as a spread on a sandwich.
