Italian Vegetable Soup
A yummy soup that is hearty and filling.
1 tsp ground basil
1 tsp ground oregano
1 tsp ground thyme
2 tbsps olive oil
64 oz chicken broth
2 cups shredded cabbage
1 cup chopped carrots
1 cup chopped celery
5 cloves garlic, minced
1 cup chopped onions
3 <span class="measurestring" title="medium whole (2-3/5" dia)">medium whole</span> tomatoes, chopped
16 oz black beans, rinsed and drained
16 oz white beans, rinsed and drained
1 cup brown rice
Heat oil in large pot over medium-high heat.
Add onions, carrots and celery. Cook 5-7 minutes, stirring occasionally. Add garlic and cook for 1 minute.
Add tomatoes, broth, oregano, basil and thyme and bring to a boil. Add cabbage and rice and reduce heat to a simmer.
Cook 30-40 minutes or until rice is tender. Stir in beans and simmer for 5 minutes or until beans are heated through.
