Italian Zucchini
A nice lighter side dish to grilled items. Can even be tossed with pasta.

Directions
  1. In a medium saucepan, add all ingredients except butter.
  2. Simmer on low-medium heat until onions and zucchini are cooked but firmer in texture. Approximately 15 minutes but don't over cook.
  3. When ready to serve mix in the butter.
  4. Serve in small bowls because you want to get all the juice too which has great flavor!
