Mediterranean White Bean Soup
Tasty white bean and tomato soup with rosemary, garlic, parsley and red wine vinegar.
1 cup white beans
1 tsp rosemary
8 cloves garlic
7 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
1/4 cup olive oil
1 cup chopped or sliced tomatoes
1/4 cup parsley
3 tbsp red wine vinegar
2 tsps salt
1 tsp black pepper
Rinse, pick over and soak the beans overnight in water. Drain.
Sauté garlic and rosemary in oil until onions translucent.
Add water and beans. Bring to a boil and simmer for 1 1/2 hours.
Add tomatoes, parsley, red wine vinegar, salt and pepper and heat through while stirring.
