Mixed Vegetable Soup IV
A low fat, filling veggie soup that's great when you're feeling hungry and don't want a high calorie snack.
1 tsp taco seasoning
2 packets onion soup mix
1 cup broccoli
1 <span class="measurestring" title="head, large (about 7" dia)">head large</span> cabbage, chopped
5 oz frozen carrots
5 oz frozen cauliflower
5 oz frozen onions
5 oz frozen green peppers
5 oz frozen spinach
2 cups tomatoes, with juice
1/2 cup slices waterchestnuts
2 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
Put water and all the vegetables in large pot.
Bring to hard boil and add onion soup mix and packet of taco seasoning mix.
Lower heat and cover.
Simmer until vegetables are tender.
Note: this soup can be enjoyed as a meal replacement or a healthy in-between meal snack.
