Mushroom and Barley Stew
A very yummy, vegetarian stew that is easy to prepare and filling.
1 dash pepper
1/2 tsp leaves thyme
1 dash salt
3 cups vegetable broth
1 cup chopped carrots
1 cup chopped celery
6 cloves garlic
3 cups pieces or slices mushrooms
1 cup chopped onions
2 <span class="measurestring" title="potato large (3" to 4-1/4" dia)">large</span> red potatoes
1/3 cup barley
Mix all ingredients in a large pot.
Bring to a boil and lower heat to a simmer.
Cover and cook for 30-45 minutes until vegetables are soft.
Serve with crusty bread.
