Oat Bran Muffins
Wonderful breakfast muffins with all natural ingredients.
1/2 tbsp salt
2 tbsps corn oil
2 large eggs
1 cup skim milk
1/2 tsp allspice
1 tsp cinnamon
1 tsp nutmeg
1 cup quartered or chopped apple
1/4 cup grated carrot
1/2 cup chopped pecans
2 tsps baking powder
1/4 cup honey
1/4 cup packed brown sugar
2 cups oat bran
Preheat oven to 350 °F (175 °C) Spray bottom of muffin tins with non-stick cooking spray.
Combine oat bran, brown sugar, baking powder, salt, cinnamon, nutmeg and allspice in one bowl.
Mix together milk, egg and honey; add milk and egg mixture to oat bran mixture and stir until moistened.
Add grated apple, carrot and pecans.
Fill muffin cups 1/2 to 2/3 full.
Bake at 350 °F for 15 to 17 minutes. Tops will brown only slightly.
