  1. Preheat oven to 400 °F (200 °C).
  2. Brown the Italian sausage.
  3. Slice and chop the vegetables.
  4. Spread the Italian sausage on the bottom of a 9x11" baking pan. Layer the vegetables on top, then the mozzarella cheese and pepperoni. Lastly pour in the egg substitute.
  5. Bake for 60 to 75 minutes until an inserted knife comes out clean.
