With all your favorite toppings, it's like pizza in a bowl.
1/4 tsp crushed red pepper
4 oz sliced pepperoni
1/3 cup dry white rice
16 oz pizza sauce
1/2 cup sliced olives
1/2 cup diced tomatoes
1/2 cup grated parmesan cheese
4 oz shredded provolone cheese
1 tsp leaves basil
1 tsp leaves oregano
2 tbsps olive oil
4 <span class="measurestring" title="cup (8 fl oz)">cups</span> chicken broth
1 clove garlic, minced
1/2 cup pieces or slices mushrooms
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion, chopped
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> green pepper, chopped
In large saucepan heat the olive oil.
Saute the onion and green pepper until softened. Stir in the garlic. Cook for a minute.
Add oregano, basil, crushed red pepper, rice, tomatoes, pizza sauce and broth.
Bring to boil. Lower heat to a simmer and cover. Cook for 20 minutes or until rice is tender.
Stir in the pepperoni, olives and mushrooms. Cook for another minute or two.
Serve the soup in individual bowls with a sprinkling of provolone and parmesan cheese.
